Each of the contemporary Guest Rooms and Suites have been innovatively designed and are inspired by the iconic Yarra River. Offering panoramic views of either the bay or the bustling city, the Hilton Melbourne South Wharf hotel is fully integrated with the new Melbourne Convention and Exhibition Centre.


The Hilton’s prestigious Nuevo 37 restaurant, which opened in April 2009, showcases modern Spanish dining by Michelin Star Chef Ramon Freixa, offering a fine dining experience in one of the most exclusive and stylish restaurants in Melbourne.

The restaurant services 396 rooms, main bar and restaurant for breakfast lunch and dinner menus. The Waldorf 800 Series island layout was chosen as the consultants required an open European feel to the kitchen. The tapas menu suits the open design along with the ease of cleaning between services.

Chef De Cuisine

Chef De Cuisine for the Nuevo 37 restaurant Philippe Perrey oversees a team of eighteen chefs alongside Michelin Star Chef Ramon Freiza.  Born in Switzerland Philippe began his career working alongside Ramon in Spain and Barcelona before settling in Melbourne at the beginning of 2009 for the opening of Nuevo 37. Philippe stated, “The Waldorf 800 Series equipment is very efficient and easy to use. Overall I am happy with the performance of all equipment”.
